I used Empress 1908 Gin which is a spirit from Canada that’s micro-distilled in copper-pot stills using juniper, rose, coriander seed, grapefruit peel, ginger root, cinnamon bark, butterfly pea blossoms. This burrito bowl is one of my go-to meals when I’m feeling lazy and just want something fast. I usually have all of the ingredients on hand which is super convenient. Cauliflower, frozen corn, and onions are roasted with olive oil and spices then paired beans and a buttery cilantro and lime rice. SO easy. Not a fan of cauliflower or corn, swap with your favorite veggies. Mini sweet bell peppers work really well too!

Watermelon Mint Prosecco Spritz

If a cocktail could taste like summer, it would be this Watermelon Mint Spritz. It’s so refreshing and especially perfect for warm weekend afternoons. Fresh mint is muddled with maple syrup, blended with watermelon, strained, then mixed with a touch of lime juice. It’s topped with a good amount of Prosecco but can easily be swapped for tequila or vodka.

I love this drink because you can easily make the watermelon juice ahead of time. You can even mix the Prosecco in with the juice and freeze it for later for a slushy.
