Pomegranate Rosemary Gin Sparkler

This festive cocktail is perfect for the holidays! It tastes and looks fancy but it’s super easy! It’s tart, slightly sweet with a hint of lime and rosemary. The secret ingredient: a rosemary simple syrup - made by heating water and sugar with a sprig of rosemary for a couple of minutes.

Pomegranate Rosemary Gin Sparkler 


Makes 1 cocktail 

Ingredients

  • 1/4 cup cane sugar 

  • 2 sprigs rosemary

  • 2 ounces pomegranate juice 

  • 1-2 ounces gin

  • 1 tsp fresh lime juice 

  • Sparkling water 

  • Fresh pomegranate arils for garnish (optional)

Directions 

  1. Make the rosemary simple syrup by combining 1/3 cup water, the sugar and 1 sprig of rosemary in a small pot. Bring to a boil, reduce heat to low and cook for a couple of minutes until the sugar has dissolved and the water becomes slightly green. Remove from heat and let cool. 

  2. Add crushed ice to a cup. Add the pomegranate juice, gin and lime juice. Add 1-2 tablespoons (or more for even sweeter) of the rosemary simple syrup. Top with sparkling water and garnish with a sprig of rosemary and pomegranate arils.
