Black Bean, Corn & Kale Salad

This refreshing salad is super quick and easy! Corn, beans, kale, tomatoes, avocado and red onion and tossed in a dressing made from lime juice, oil and Mexican spices. It’s the perfect meal when feeling something light, or can be served along side any Mexican-inspired dish.

Black Bean, Corn & Kale Salad

Serves 2 

Ingredients

  • 1 (15oz) can black beans, drained and rinsed 

  • 1 (15oz) can corn, drained and rinsed (Feel free to use frozen or fresh corn)

  • 1 cup diced cherry tomatoes, quartered 

  • 2 cups chopped kale

  • 1/2 cup sliced red onion 

  • 1 avocado, diced

  • 2 tbsp chopped cilantro 

For the dressing:

  • 2 tbsp olive oil 

  • 1 tbsp lime juice

  • 1/4 tsp salt 

  • 1/4 tsp pepper

  • 1/4 tsp cayenne

  • 1/4 tsp cumin

  • 1/4 tsp paprika 

  • 1/2 tsp maple syrup  

 Directions

  1. In a large bowl, combine the black beans, corn, cherry tomatoes, kale, red onion, avocado and chopped cilantro. 

  2. In a small bowl, whisk together all of the ingredients for the dressing. Pour dressing over the salad and gently toss.
