Quick Pickled Red Onions

These beautiful pink pickled onions are the perfect addition to sandwiches, tacos, burrito bowls, salads, avo toast, and more. They’re pretty much good on anything. Sliced red onions are combined with white vinegar, sugar, salt, peppercorns, and garlic. Super easy and always good to have on hand on the fridge!

The longer they pickle, the more flavorful and pink they will get. See the photos below for how they will look after 1 hour vs after pickling overnight.

Quick Pickled Red Onions

Ingredients

  • 1 small red onion

  • 1/4 cup hot water

  • 3/4 cup white vinegar

  • 1-2 teaspoons sugar

  • 1/2 teaspoon salt

  • 1 teaspoon whole peppercorns

  • 1 garlic clove, minced

Directions

  1. Thinly slice the red onion. I like to use a mandoline set to the 3/16 inch setting.

  2. Add the sliced onions to a jar and pour the water over the onions. Screw the lid on a give it a good shake. Add the remaining ingredients, cover and shake again.

  3. Let rest at room temp for at least 1 hour. If not using right away, store in the fridge for up to about a week.
