Chocolate Chip Peanut Butter Banana Cookies

What more could you want in a cookie!? Two of my favorite cookies are oatmeal chocolate chip and peanut butter so I decided to combine the two and add in a couple bananas, because why not? These gooey chocolate chip peanut butter banana cookies are seriously addicting, even when made gluten free.

Chocolate Chip Peanut Butter Banana Cookies

Ingredients

Makes 16 cookies

  • 1 1/2 cup gluten free flour (I use Pamela's Flour Blend)

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/3 cup brown sugar

  • 1/4 cup peanut butter

  • 1/4 cup coconut oil

  • 1 tbsp agave

  • 2 eggs

  • 1 tbsp vanilla extract

  • 1-2 bananas

  • 1/3 cup gluten free oats

Directions

  1. Preheat oven to 350 degrees.

  2. Combine the flour, baking powder, baking soda and salt.

  3. In a bowl of an electric mixer, beat together the brown sugar, peanut butter and oil. Slowly add in the agave, eggs, vanilla, bananas and oats.

  4. Form dough into balls and place on a greased cookie sheet.

  5. Bake for 8-11 minutes (cookies will not spread out).

  6. Optional: Flatten cookies with a fork.
