Quick Pickled Asian Cucumbers

These quick and easy pickled cucumbers are my favorite addition to any Asian style dish. Add them to noodles, fried rice or ramen. They’re especially good on my Crispy Rice Salad and Crispy Hoison Tofu Tacos. Super simple and done in as soon as 30 minutes. Slightly sweet, sour and spicy.

Quick Pickled Asian Cucumbers

Ingredients

  • 1 English cucumber (or 2-3 Persian cucumbers)

  • 1 cup rice wine vinegar

  • 1 tsp soy sauce

  • 2 tsp cane sugar

  • 1/4 tsp salt

  • 1/2 tsp red chili flakes

Directions

  1. Cut the cucumber(s) into slices then cut each slice in half.

  2. Add all of the ingredients to a jar, screw the lid on and shake.

  3. Place jar in the fridge and allow to pickle for at least 30 minutes, or up to a few days. Every so often, give the jar a good shake. The longer they sit, the more flavorful they will be.
