Chocolate Coconut Date Energy Balls

These vegan energy balls are the perfect snack when craving something sweet. They're so easy you can whip them up in a matter of minutes. Dates, cashews and chocolate chips are blended together to form soft and chewy balls, which are then dipped in chocolate and rolled in coconut flakes. 

Ingredients: 

  • 22 Medjool dates

  • 1 cup raw cashews

  • 1 cup dark chocolate chips

  • 1 tbsp coconut oil

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 1 1/2 cups shredded coconut

Directions:

  1. In a food processor or strong blender, add the dates, cashews, 1/3 of the chocolate chips (the rest will be used later), cinnamon, and salt. Process until mixture is sticky and crumbly. Mixture should easily stick together when forming into a ball. If it doesn't, add a couple more dates.

  2. Using your hands, roll into about 14 balls.

  3. In a small bowl, add the remaining 2/3 cups chocolate chips and microwave in ten second intervals, stirring in between each interval, until melted. Set aside.

  4. In a medium bowl, add the coconut.

  5. One at a time, dip a ball in the chocolate , then roll in the coconut.

  6. Place all the balls on a plate and refrigerate for 10 minutes for the chocolate to set.

*Store in the fridge for a firmer consistency
