Snap Pea, Green Bean & Farro Salad

This salad is simple and fresh but hearty with the farro. Farro has a slight nutty flavor and is chewier in texture, compared to brown rice. It’s definitely my favorite grain, especially for salads.

SNAP PEA, GREEN BEAN & FARRO SALAD

Ingredients

  • 1 cup farro

  • 1 1/2 cups vegetable broth using Better Than Boullion

  • 8 oz snap peas, sliced in half lengthwise

  • 5 oz green beans, sliced in half lengthwise

  • 8 oz cherry tomatoes, sliced in half

  • 3 tbsp balsamic vinegar

  • 3 tbsp olive oil

  • 1 tbsp fresh lemon juice

  • 1/2 tsp lemon zest

  • 1/2 tsp honey

  • 1/4 cup chopped basil

  • salt and pepper to taste

Directions

  1. To a medium pot over high heat, add the farro, vegetable broth and a little bit of olive oil. Cook according to your farro package’s directions. Once done, remove from heat and let cool.

  2. Meanwhile, add the remaining ingredients to a large serving bowl. Once the farro has cooled, add it to the bowl and toss everything together.
