Grapefruit, Blood Orange, Tangerine & Avocado Salad

This beautiful salad is so refreshing. The combination of avocado and citrus is perfect. This salad is great because you can mix it up with the citrus of your choice. You can use just grapefruit, swap regular oranges for the blood oranges, etc..

Grapefruit, Blood Orange, Tangerine & Avocado Salad

Serves 2-4

Ingredients

  • 2 blood oranges, peeled and sliced 

  • 1 large grapefruit, peeled and sliced 

  • 2 tangerines (1 peeled and sliced, 1 reserved for the dressing) 

  • 1 large avocado, cubed 

  • 1/4 cup shaved red onion 

  • 1/2 cup chopped kale

For the dressing:

  • 3 tbsp olive oil 

  • 2 tbsp tangerine juice

  • 1/2 tsp maple syrup

  • 1/2 tsp pepper

  • 1/4 tsp salt

Directions

  1. In a large bowl add the blood orange slices, the grapefruit slices and the tangerine slices (from one tangerine), avocado, shaved red onion and chopped kale. (Feel free to just simply cube the avocado. I did an avocado rose, and sliced avocado for these photos which take a bit more effort.)

  2. In a small bowl, whisk together the olive oil, tangerine juice, maple syrup, pepper and salt. 

  3. Pour the dressing over the citrus and gently mix.
