The Perfect Chai Tea Latte

I have been trying to perfect my chai tea latte recipe for months and I have finally gotten it just right! It's slightly spicy, sweet and creamy. Have it warm or serve over ice!

Ingredients:

Makes about 4 cups 

  • 3 cups water

  • 1 tbsp cardamom

  • 1 tsp black peppercorns

  • 1 tbsp whole cloves

  • 1 tsp ground allspice

  • 2 cinnamon sticks

  • 3 1-inch slices of ginger

  • 2 star anise pods

  • 1 vanilla bean

  • 2 black tea bags

  • 1 tbsp sugar

  • 1 tbsp honey

  • 2 cups half and half

Directions:

  1. In a medium pot over high heat, combine the water, cardamom, peppercorns, cloves, allspice, cinnamon sticks, ginger, and star anise.

  2. Slice the vanilla bean lengthwise and using the dull side of a knife, scrape out the vanilla seeds.

  3. Add the bean and seeds to the pot.

  4. Cover pot and bring to a boil.

  5. Reduce heat to low and simmer for 30 minutes, or longer for a stronger flavor. I let it simmer for about 45 minutes.

  6. Add the tea bags and keep simmering for 15 more minutes.

  7. Stir in the sugar and honey.

  8. Add the half and half.

  9. Remove from heat.

  10. Let cool slightly then strain into serving cups.
