MINI BUTTERMILK PANCAKE STACKS

These mini buttermilk pancake stacks are perfect for brunches, parties and kids love them.

 

MIXED + MEASURED MINI PANCAKE STACKS

Ingredients

  • 2 cups all-purpose flour

  • 1⁄2 tsp baking soda

  • 2 tsp baking powder

  • 1 tbsp sugar

  • 1⁄4 tsp salt

  • 3 eggs

  • 2 cups buttermilk

  • 1 tbsp butter, melted, plus more for the griddle

  • Banana, sliced

  • Strawberries, sliced

  • Raspberries, sliced

  • Powdered sugar

  • Bamboo sticks

Directions

  1. In a large bowl, whisk together the flour, baking soda, baking powder, sugar, and salt. In a separate bowl, beat the eggs. Whisk in the buttermilk and butter. Add to the dry ingredients and whisk until combined.

  2. Heat a griddle over medium heat. Grease with butter. Spoon 2 tbsp batter onto hot griddle. Cook until golden brown on each side. Stack pancakes three high. Top with fruit, dust with powdered sugar, and stick bamboo sticks through each stack to serve.
