KOREAN SHORT RIB TACOS WITH PICKLED SLAW

These Crockpot short rib tacos are one of my all time favorite dishes! They are perfect for parties because they’re so easy. All you have to do is throw everything in a slow cooker and wait. They will definitely impress guests. The pickled slaw is also super easy and pairs perfectly with the savory short ribs.

Don’t forget to skim the fat off of the top. A turkey baster works well.

Ingredients

For the ribs:

  • 6 pounds short ribs

  • 1 1/2 cups soy sauce

  • 3/4 cup rice vinegar

  • 1/4 cup mirin

  • 1 cup brown sugar

  • 8 cloves garlic, minced

  • 4 tbsp fresh ginger, minced

  • 4 tbsp sesame oil

  • 2 tsp red pepper flakes

  • 1 tsp chili garlic sauce

For the slaw:

  • 2 tsp rice vinegar

  • 1 tsp sugar

  • 1tsp fresh ginger, minced

  • 1tsp red pepper flakes

  • 5 large carrots, peeled into strips

  • 1 red onion, thinly sliced

  • 1 handful cilantro

  • 2tsp lime juice

  • 2 tbsp toasted sesame seeds

Directions

  1. Combine the soy sauce, rice vinegar, mirin, brown sugar, garlic, ginger, sesame oil, red pepper flakes, and chili garlic sauce.

  2. Place the ribs in a slow cooker and pour in the sauce.

  3. Turn slow cooker on low heat, cover, and cook for 6 hours.

  4. While the ribs are cookies, mix together the vinegar, sugar, ginger and red pepper flakes. Add the carrots and onions. Just before serving, add the cilantro, lime juice, sesame oil, and sesame seeds.

  5. Once the ribs are fork tender, remove them, and discard the bones. Skim the fat off the top of the sauce. Shred the meat with two forks and return to the sauce.
  6. Finally, assemble the tacos!
