Ingredients

  • 1 bag pasta
  • 4 slices bacon (I like to use thick-cut peppered bacon)
  • 1 yellow onion, chopped
  • 3 large garlic cloves, minced
  • 1 lb cherry tomatoes
  • 1 tsp pepper
  • 1 tsp red pepper flakes
  • 1 tsp Italian seasoning
  • 1 cup gruyere, grated
  • 2 cups parmesan, grated

Directions

  1. Preheat oven to 450 and lightly oil a 9 x 13in pan.
  2. Cook pasta until al dente. Drain the pasta, and place back into the pot. Set aside
  3. Cut bacon into chunks. Add them to a large pan, over medium-high heat, and cook until golden brown and a little crispy.
  4. Once done, transfer the bacon bits to a small bowl, but keep remaining bacon fat in the pan.
  5. Add the chopped onion to the pan and sautée for a couple minutes.
  6. Add the minced garlic, whole cherry tomatoes, and spices.
  7. Cook for about 10 minutes, until the cherry tomatoes soften and wrinkle.
  8. Using a spatula, press down on the tomatoes to release the juices. Cook over medium heat for 5 more minutes.
  9. Add the tomatoes and bacon to the pot with the pasta and mix together.
  10. In a bowl, combine the grated gruyere and parmesan.
  11. Mix half of the cheese into the pasta.
  12. Add pasta to the pan and top with remaining cheese.
  13. Bake for 15 minutes, or until cheese is golden brown.
